I am sure we have all had one of those days when we just needed a simple meal idea that doesn't take too much effort and doesn't require us to have to follow a difficult recipe. It is always important to have a few recipes in your repertoire that is simple and tasty. This is one of my standard dishes, it is easy and tastes perfect every time. I stumbled upon it while browsing
allrecipes.com and other then a few tweaks found it to be just the thing I needed for those stressful days when I don't have the time of the energy to prepare a complicated meal.
4 chicken breasts
1/2 tsp thyme
1/2 tsp salt
1/4 tsp pepper
1/2 tsp lemon juice
1 (10.5 oz) can of cream of chicken soup
1/4 c. milk
1/2 c. sliced black olives
4 lemon slices
Season the chicken breasts with the thyme, salt, pepper and lemon juice. Heat 1 Tbsp of olive oil in a skillet and brown the chicken on both sides.
Add olives, lemon slices, milk and the can of soup to the pan and heat to a boil. Reduce heat to low, cover and cook for 10 minutes, or until chicken is completely cooked.
Serve with brown rice.
