Easy meal idea for two: Harissa Chicken and Herb Couscous

More then ever I am needing meal ideas to cook for two. Yes having leftovers is good but if you are anything like us when we cook more we are often tempted to eat more. And seeing as how I am still trying to lose all of this baby weight cooking just enough for us is really a must sometimes. This is something I created the other night that was just what I was looking for. I would encourage you to look at some of your easiest favorite recipes and look at how you can alter it to only cook as much as you need because the first part of weight loss is portion control and what better way to control it then by only cooking what you should eat.




Harissa Chicken and Herb Couscous
2 chicken breasts
juice from 1/2 lemon
1 Tbsp harissa paste (this needs to become a staple in your house it is so amazing)
small handful of coriander leaves
salt and pepper
1/2 c. couscous
3/4 c. boiled water
1/2 chicken bouillon cube
1/4 tsp paprika
1 tsp harissa paste
1 Tbsp coriander leaves








Preheat oven to 190 C (350 F)
Add the lemon juice, harissa paste and coriander leaves in a small bowl.






Grind some fresh pepper and salt on the chicken and then pour the harissa mixture on top.








Place on a baking tray and cook in the oven for 10-15 minutes until no longer pink in the middle.


Broil for the last 2 minutes to get a nice browning on the top.








For the couscous add the bouillon cube, paprika, harissa paste and coriander leaves into a 1qt. bowl.










Pour boiling water over and stir until the bouillon is dissolved.










Add the couscous to the broth and cover. Let sit for 5 minutes.














Fluff with a fork.
