Warm up with a bowl of Creamy Onion Soup


This is going to be a pretty interesting winter for me as this will be the first year I have ever lived somewhere that actually has proper winters. I am both excited and nervous about the prospect of the experience. So in preparation for the cold weather I have been trying my hand at both new and old recipes that are perfect for cold days.

This particular one was a recipe I created years ago after trying something similar at a restaurant. It is so creamy and warm and the best part is as long as you have sweet onions the rest of the ingredients are pretty much stock items that you will probably have on hand any way. So it is a perfect soup to make up quickly when you have no idea what to do for dinner or even lunch.



Creamy Onion Soup
2 c. of chopped sweet onions (it is important that you use sweet onions so don’t try to substitute)
1/2 c. dry white wine
3 Tbsp olive oil
2 c. chicken or vegetable broth
1/4 tsp salt
1/4 tsp pepper
3 Tbsp butter
3 Tbsp flour
1 1/2 c. milk
1/2 c grated Double Gloucester (or any creamy cheese)

Heat up the olive oil in a saucepan and add chopped onions. Cook on medium heat stirring frequently. You want the onions soft and transparent but not brown. 

Once your onions are done add your wine and cook until most of the liquid has been absorbed into the onions.




Add broth and salt and pepper and heat through.





Make a white sauce in a separate pan by melting the butter with the flour until you have a butter paste.





Stir in the milk and cook on low heat until the sauce thickens.







Add the cheese and blend in until melted








Pour the white sauce into your onion soup and stir to blend the two.





Serve with warm, crusty bread.

  1. For a delicious change I tried caramelizing my onions and it turned out even better then the original!
