Getting that delcious roasted corn flavor from the oven

To me nothing says summer then the taste of corn on the cob, especially when it is grilled on a charcoal grill. But what if you get that craving for grilled corn on the cob long before the season begins? Thankfully there is a way to get a great, grilled corn flavor without a lot of effort. And I love it when I can get the same flavor I want in a hassle free method.


Oven Roasted Corn
56 g (1/2 stick) butter, room temperature
1 red pepper, diced
1 medium onion, diced
226 g (1/2 lb) frozen corn
1/2 tsp salt
1 tsp paprika
1 tsp garlic powder




Pre-heat oven to 180 C (350 F)


Saute onion and red pepper in a small amount of butter until tender. Remove from heat.












Refresh frozen corn by running it under cold tap water, drain completely and then put in a roasting tray.







Mix corn with veggies and butter tossing so that all of the ingredients are mixed in with the butter.  Sprinkle the salt, paprika and garlic powder.














Roast in pre-heated oven until golden brown, about 15-20 minutes, making sure to stir half way through.
