Tomato Bruschetta with Roasted Peppers

That holidays are often filled with parties, celebrations with friends and family filled with wonderful tasty delights.  This year my focus has been a lot more on healthier, fresh options so I decided to put a new twist on a fresh classic, Bruschetta.  I found inspiration through my favorite recipe website allrecipes and decided that flavor and color would be my main focus with this dish. It is extremely easy to make and everyone will be delighted.




Tomato Bruschetta with Roasted Peppers
6 roma tomatoes dinced
1 pkg of yellow cherry tomatoes, diced
1 jar of roasted red and yellow peppers
3 cloves of garlic
1/4 c. fresh basil, stems removed and chopped
1/4 tsp salt
1/4 tsp pepper
2 Tbsp balsamic vinegar
1/4 c. olive oil


 In a large bowl combine all of your fresh ingredients and then allow the mixture to sit for at least 10 minutes.  Serve in a bowl with fresh sliced bread or sprinkle some tomato mixture onto baguette slices and top with mozzarella cheese, broiling in the oven until the cheese is melted about 5 minutes.
