Caramelized Onion, Mushroom and Bacon Stuffed Burger
500g minced beef
1 egg
120g (3/4 c.) breadcrumbs
2 Tbsp Worcestershire sauce
4 Tbsp olive oil
5 rashers of bacon, cooked and broken into small pieces
70g (1 c.) mushrooms, diced small
28g (1/4 c.) cheese
1 onion
6 buns
Slice the onions and into thin rings. Heat 2 Tbsp of olive oil in a sauce pan pan and wait until the oil is hot and begins to ripple. Add the onions and stir the onions to make sure they are completely coated with the oil. Add a small pinch of salt and continue to stir the onions as they cook. The onions will begin to brown if you feel they are sticking to the pan too much can add a small amount of water to deglaze them. This will take about 20 minutes. Set the onions aside.
Heat 2 Tbsp of olive oil and wait until the oil is hot before adding the mushrooms. Cook the mushrooms in the hot oil, stirring only occasionally. Cook for 5-7 minutes; until the mushrooms are a nice golden brown.
Set aside the mushrooms, bacon, onion and cheese.
Combine the minced beef, breadcrumbs, egg and Worcestershire sauce.
Make 12 thin patties. Divide the stuffing ingredients into 6 piles and add the portions onto 6 of the patties.
Add the other patties onto the filled one and press it down so that the stuffing mixture is sealed. Grill patties over a hot grill for 5 minutes per side.
